I have never been a big breakfast person. I know, I know its the most important meal of the day. It increases your metabolism and gives you the energy you need to be productive. The problem is, it comes before my favorite food group, coffee, has been fully consumed (and by fully, I mean my second cup). It also comes while I am trying to wrangle my kindergartener into clothes & the appropriate shoes for the day and prevent my toddler from hiding her breakfast in the couch cushions. But after skipping it for so long and dealing with 10am tummy growls/headaches, I finally discovered a quick, healthy & delicious breakfast that I don’t mind eating over & over again.
Now here at Montgomery house, I am pretty cautious about our sugar intake. We aren’t no sugar at all people, but we are limited sugar people. Ok well, truthfully, I am a limited sugar person. Everyone else in the house would happily eat sugar all day every day if they could. But I exercise my mother power over them and make them conform to my will (bahaha, yeah I even I am laughing at how unrealistic that statement was). Anyway the point is, we (I) try to keep it reasonably healthy around here. Which is why I fell in love pepperidge farm cinnamon swirl bread. Bread is one of those sneaky places added sugar likes to hide and if you aren’t reading labels you can load up on it from foods that otherwise appear to be good choices. My mother in law was actually the one who turned me on to this bread when she had to do a major sugar cut back in her diet after a visit with her doctor. Only 4 grams of sugar in this bread and its still tasty!
I am a serious coffee lover, like SERIOUS. So it won’t shock you that my favorite dessert is tiramisu and one of the best parts about tiramisu is mascarpone. So one day I was at the store with the grand idea that I would make myself some tiramisu (that laughing you hear, thats my husband in the background at the very thought of me attempting to make something that complicated.) I ,in fact, never made the tiramisu. So as I was rummaging through the fridge trying to find an easy snack for the two STARVING children who didn’t eat the lunch I thoughtfully threw together for them, I saw the Belgioioso mascarpone that was nearing is expiration date still unopened and it just came to me “spread the cheese on the bread and give to the minions, I mean children.” This revelation may or may not have had something to do with the direction to do so clearly printed on the top of the lid.
We devoured it. So delicious and creamy, but it was lacking that one little thing. If you have ever tried just plain mascarpone its a little bland, it needs a buddy to balance its creaminess. Thats when I remembered the awesomely delicious wine jelly my friend makes just sitting in my pantry waiting for the perfect occasion (which was suppose to be the fancy Christmas party I never threw.) Yeah, you heard me say that right, wine in jelly form. Wine you can put on food and eat it. Wine you can have anytime of the day because alcohol burns off in the cooking process but somehow still retains its soothing taste. Wine you can give you kids because you don’t have any other jelly in the house. Now, yes, this jelly has some sugar in it, its true and I am ok with that because, well, its wine with my breakfast or snack.
Now you thinking, hey umm didn’t you say this post was about breakfast not the snack you fed your kids? Yes! What started as a snack has turned into my go to breakfast because of the amazing discovery I found right on the top of the mascarpone lid ” half the calories of butter, fresh & natural, low in salt”(those lids really are so helpful, aren’t they). Its health (ier)! Easy, filling, delicious, wine and heath(ier)- breakfast win!
Now chances are, I may tire of my go to breakfast, eventually, maybe. So what are your go-to easy breakfasts?
